“It’s not just another baby leaf”, ovvero “non è la solita insalata”: già dal claim che ha adottato alcuni anni fa, emergono la vocazione all’innovazione e il dinamismo della Ortomad, la società del Gruppo La Linea Verde specializzata nella produzione di baby leaf. Fondata nel 1998 nella Piana del Sele, l’azienda è nata come realtà agricola ed è via via cresciuta, diventando una realtà industriale, capace di servire, anche just in time, il mercato europeo e non solo. Nel 2022 ha movimentato oltre 20mila tonnellate di prodotti orticoli, coltivati su 670 ettari (di cui 100 in serre) realizzando 48 milioni di euro di fatturato, per oltre un terzo sviluppati sui mercati esteri, come ci spiega il direttore commerciale estero Clotario Maddalo.

Qual è oggi l’identità di Ortomad e quali sono i suoi plus?

Il nostro primo punto di forza sono i nostri prodotti su cui investiamo in modo costante per far sì che siano sempre esclusivi in termini di qualità, ricetta e sicurezza. A questo si aggiungono la nostra capacità di realizzare qualsiasi tipo di formato e di confezionamento e la gestione ultra-flessibile della personalizzazione dei packaging conto terzi, ottenute anche grazie agli investimenti in stabilimento.

Cos’avete già realizzato e cosa vi apprestate a fare?

Abbiamo pressoché terminato il potenziamento del nostro impianto (vedi box, ndr) finalizzato ad aumentare la produttività aziendale, a ridurre l’impatto energetico e a sviluppare l’eco-sostenibilità dell’impianto produttivo attraverso l’innovazione tecnologica. Possiamo esser fieri di esser riusciti a trasformare radicalmente il processo produttivo, ammodernandolo e incrementando i fattori di qualità e competitività. E non è ancora finita.

Nel corso di quest’anno implementeremo un innovativo processo produttivo per il confezionamento dei prodotti di prima gamma. Oltre ad automatizzare la fase di confezionamento, ci permetterà di migliorare la ripartizione dei singoli ingredienti all’interno delle ricette tramite un sistema di precisione nel dosaggio e nella miscelazione, in grado di salvaguardare la qualità dei prodotti grazie alla totale assenza di danni meccanici.

Avete altre novità in arrivo?

Accresceremo la sicurezza dei nostri articoli confezionati grazie all’installazione di un moderno selettore ottico, in grado di eliminare eventuali corpi estranei e difettosità. Infine, a tutela dei consumatori e della reputation dell’azienda, incrementeremo le garanzie offerte ai nostri clienti tramite selezionatrici ponderali posizionate su tutti i nostri fine-linea.

Com’è articolata la vostra offerta?

La nostra produzione comprende la prima gamma, convenzionale e biologica, una linea prelavata e un’ampia linea di quarta gamma, fatta di verdure fresche, selezionate e raccolte dalla nostra terra. Da poco abbiamo anche lanciato una speciale linea di prima gamma con dressing incluso, il Wealthy Mix, per cui abbiamo messo a punto una ricetta capace di esaltare il sapore e le proprietà organolettiche di ogni singola foglia e che, quindi, abbiamo impreziosito con un condimento che ci vantiamo essere frutto dell’eccellenza gastronomica italiana. Un prodotto esclusivo, risultato di una doppia azione, di cui andiamo orgogliosi e che riassume il nostro approccio alla produzione.

Com’è nato, dunque, il Whealthy Mix?

È il frutto di una sperimentazione, un “case” di R&S, che abbiamo tenuto alto nelle ambizioni anche in un momento di flessione del mercato. Dall’altro l’idea di questo speciale mix di foglie rappresenta anche la risposta all’esigenza di cui parlavo prima, di dare al consumatore quel plusvalore e quella ricercatezza a cui ambisce.

Un progetto che concretizza il messaggio riassunto nel nostro claim “It’s not just another baby leaf”, con cui cerchiamo di trasferire in modo semplice e immediato la complessità del nostro know-how e la completezza della nostra proposta destinata sia all’Italia sia all’estero.

Come sta andando il mercato?

Non possiamo nascondere il fatto che il 2022 è stato un anno infausto, non soltanto per noi ma per il comparto in generale. I costi di energia e delle forniture, la difficoltà nell’approvvigionamento e la questione del prezzo delle materie prime, che ha impattato notevolmente anche sugli imballaggi, hanno reso più difficile il governo della gestione aziendale.

Invece, il 2023 si è aperto con prospettive migliori, ma ancora con lo scotto dell’anno precedente. Siamo un’azienda solida e il nostro obiettivo in questo momento è quello di ammortizzare quanto prima la scia dei costi sostenuti senza impattare sui programmi in corso.

Come sta evolvendo il consumatore?

Il consumatore è sempre più informato e consapevole: non chiede più “la solita insalata”, ma mix più evoluti, dotati di valore aggiunto. Però, allo stesso tempo, si trova a dover affrontare forti rincari. Per questo motivo ci troviamo di fronte a un mercato più esigente e più attento rispetto al passato. La distribuzione moderna richiede performance elevate non solo in termini di prodotto ma di anche di servizio e di comunicazione.

Alla luce di quest’evoluzione del mercato e delle sue criticità, come vedete il presente e il futuro della prima gamma?

La prima gamma si sta avvicinando sempre di più alla quarta gamma sia per il contenuto in servizio sia per le modalità di acquisto da parte del consumatore e, quindi, del buyer. Anche sulla prima gamma inizia a diventare importante il sostegno di una comunicazione adeguata, di uno storytelling di prodotto che lo renda pronto per essere messo a scaffale e che lo accompagni con una narrazione rivolta al consumatore finale.

Gli interventi sullo stabilimento in termini di:

1) Eco-sostenibilità

• Ammodernamento delle linee di produzione, grazie all’installazione di macchine caratterizzate da una maggiore efficienza energetica (tunnel di asciugatura a CO2 di nuova generazione, ecc.);

• Monitoraggio dei consumi energetici e storicizzazione dei dati per individuare eventuali sprechi e/o malfunzionamenti e intraprendere adeguate misure in un’ottica di miglioramento continuo dell’efficienza energetica.

• Risparmio idrico grazie al recupero e reimpiego delle acque di processo idonee.

2) Produttività

• Potenziamento delle linee di lavorazione e conseguente installazione di macchine caratterizzate da una maggiore efficienza produttiva;

• Sviluppo di logiche di automazione per l’ottimizzazione del processo delle linee di lavorazione, dei flussi di semilavorati e per le movimentazioni degli scarti di lavorazione (impianto di aspirazione);

• Acquisizione, storicizzazione ed elaborazione dati di processo per attuare misure di ottimizzazione in termini di produttività e rese (Manufacturing Execution System).

3) Sicurezza

• Controllo centralizzato dell’impianto e logiche di automazione e sicurezza che intervengono su tutte le linee in caso di allarme.

Ortomad’s mantra, committed to innovative solutions as the new product Whealthy Mix

‘It’s not just another baby leaf’, or ‘it’s not the usual salad’: already from the claim it adopted a few years ago, both vocation for innovation and dynamism of Ortomad emerge. We are talking about the company of La Linea Verde Group specialized in the production of baby leaves. Founded in 1998 in the Piana del Sele, this company was born as an agricultural reality and has gradually grown, becoming an industrial reality, capable of serving, even just in time, the European market and beyond. In 2022 it distributed over 20 thousand tonnes of horticultural products, grown on 670 hectares (100 of which in greenhouses), achieving a turnover of 48 million Euros, over a third of which developed on foreign markets, as explained by Clotario Maddalo, foreign sales director.

What is Ortomad’s identity today and what are its pluses?

Our first strong point is our products, in which we invest constantly to ensure that they are always exclusive in terms of quality, recipe, and safety. Added to this are our ability to create any type of format and packaging as well as ultra-flexible management of packaging customization for third parties, also obtained thanks to investments in the plant.

What have you already accomplished and what are you preparing to do?

We have almost completed the upgrading of our plant (see box, ed) aimed at increasing company productivity, reducing the energy impact, and developing the eco-sustainability of the production plant through technological innovation. We can be proud of having succeeded in radically transforming our production process, modernizing it and increasing the factors of quality and competitiveness. And it’s not over yet.

During this year we will implement an innovative production process for the packaging of fresh products. In addition to automating the packaging phase, it will allow us to improve the distribution of the individual ingredients within the recipes through a precision dosing and mixing system, capable of safeguarding the quality of the products thanks to the total absence of mechanical damage.

Do you have any other new coming products?

We will increase the safety of our packaged items thanks to the installation of a modern optical selector, capable of eliminating any foreign bodies and defects. Finally, to protect both consumers and company’s reputation, we will increase the guarantees offered to our customers through checkweighers positioned on all our end-of-line parts.

How is your offer structured?

Our production includes fresh products, both conventional and organic ones, a pre-washed line, and a broad line of fresh-cut produce, made of fresh vegetables, selected and harvested from our land. We have also recently launched a special line of fresh products with dressing included, Wealthy Mix, for which we have developed a recipe capable of enhancing both flavour and organoleptic properties of each individual leaf; we have therefore enhanced this product with a seasoning which we pride ourselves on being the fruit of Italian gastronomic excellence. It is exclusive product, the result of a double action, of which we are proud and which sums up our approach to production.

How was Whealthy Mix born?

It is the result of an experimentation, a R&D ‘case’, which we have kept high in our ambitions even in a moment of market downturn. On the other hand, the idea of this special mix of leaves also represents the answer to the need I mentioned earlier, to give consumers the added value and the refinement to which they aspire. This project realizes the message summarized in our claim ‘It’s not just another baby leaf’, with which we try to transfer in a simple and immediate way the complexity of our know-how and the completeness of our proposal intended for both Italy and foreign Countries.

How is the market doing?

We cannot hide the fact that 2022 has been an unfortunate year, not only for us, but for our sector in general. The costs of energy and supplies, the difficulties in the supply, and the problem of the price of raw materials, which has also had a significant impact on packaging, have made corporate governance more difficult. Instead, 2023 opened with better prospects, but still with the difficulties of the previous year. We are a solid company and our goal at the moment is to amortize the costs incurred as soon as possible without impacting the programs in progress.

How are consumers evolving?

The consumers are increasingly informed and aware: they no longer ask for ‘the usual salad’, but more evolved mixes, with added value. However, at the same time, they have to face steep price increases. For this reason, we are faced with a more demanding and more attentive market than in the past. Modern distribution requires high performance not only in terms of product, but also of service and communication.

In the light of this evolution of the market and its critical issues, how do you see the present and the future of fresh products?

Fresh products are getting closer and closer to the fresh-cut produce both for their content in service and methods of purchase by the consumers and, therefore, by buyers. Even for fresh products, the support of adequate communication and product storytelling that makes them ready to be put on the shelf and that accompanies them with a narrative aimed at the final consumer is starting to become important.

Interventions on the plant in terms of

1) Eco-sustainability

• Modernization of production lines, thanks to the installation of machines characterized by greater energy efficiency (new generation CO2 drying tunnel, etc.);

• Monitoring of energy consumption and data historicization to identify any waste and/or malfunctions and take appropriate measures with a view to continuous improvement of energy efficiency.

• Water saving thanks to the recovery and reuse of suitable process water.

2) Productivity

• Upgrading of processing lines and consequent installation of machines characterized by greater production efficiency;

• Development of automation logics for the optimization of the process of the production lines, of the flows of semi-finished products, and for the handling of processing waste (intake system);

• Acquisition, historicization and processing of process data to implement optimization measures in terms of productivity and yields (Manufacturing Execution System).

3) Safety

• Centralized control of both system and automation and safety logics that intervene on all lines in the event of an alarm.
